i said that this technique works due to osmosis. the high soncentration of salt moves into the meat and exerts pressure on the cell walls, dissrupting the equilibrium in which the bacteria survive. the pressure prevents the bacteria from drawing in nutrients, therefore they cannot reproduce or survive
is this right?
That’s a great answer, and it is correct. But more than preventing them from having nutrients, the gradient will also suck the water out of the bacteria and outright kill them. Still, yours is quite good enough on its own.
